Pina Colada Ice Cream Dessert (Coconut Ice Cream on Pineapple Puree)
I made a really simple Piña Colada ice cream a couple of years ago.
As simple as coconut ice cream floating on a pineapple purée.
In my case I made it with pineapple in syrup, blended with a little of its juice — and I stress, only a little. I did it in the Thermomix, which gave an interesting texture, and then just the ice cream (which this time I bought at La Sirena) on top, and dessert is done.
It was good, but with fresh pineapple and a better-quality ice cream it would be fantastic. The splash of rum is up to you.
