Zucchini and Mozzarella Bruschetta
A little while ago I posted a simple "recipe" for a typical Italian bruschetta (also called crostini) — here it is.
Yesterday I made these other bruschette (the "e" is the feminine plural in Italian) with zucchini (zucchine) and mozzarella.
There's not much to explain: toasted bread rubbed with a little garlic (very, very little), a drizzle of oil, some zucchini sautéed in a little oil, and a good mozzarella as the base.
If you put the hot zucchini on top of the mozzarella on the bruschetta and serve it quickly, the aromas it gives off are very successful and subtle.
It will surprise you.
