Couscous with Vegetables, Raisins and Pine Nuts
This is an energising vegetable first course in which, instead of the pasta or rice more common in our cooking today, we use couscous.
Cut up all the vegetables: the broccoli into florets about the size of your thumb, the apple into sticks, and the green beans also into sticks by cutting them lengthwise into 3. Sauté these vegetables in a frying pan in half butter, half olive oil for about 4-5 minutes; they should stay al dente, depending on how you've cut them. At the last moment add a pinch of cumin, the salt and a splash of ranci wine, and cook for 2-3 more minutes.
Prepare the couscous according to the packet instructions; if you've bought the pre-cooked kind, it's ready in just 5 minutes.
