Yoghurt Flan with Walnuts and Honey

I found this recipe on a cooking blog, http://www.directoalpaladar.com/, and made it this weekend. The texture is very interesting, a bit like panna cotta.

Ingredients

Yoghurt flan with walnuts and honey
  • 4 natural yoghurts
  • 7 gelatine leaves
  • 1.5 lemons
  • 4 tablespoons honey
  • 50 grams walnuts.

Method
Soak the gelatine until soft. Meanwhile, grate the lemon zest and mix it with the yoghurts in a bowl. Heat 3 tablespoons of honey in half a glass of water and, when it starts to boil, add the gelatine and turn off the heat, stirring well until it dissolves.

Leave to rest for a couple of minutes and pour over the yoghurt, stirring constantly. Once the mixture is smooth, pour it into flan moulds and leave to set in the fridge for about two hours.

Squeeze the juice of the two lemons and heat it in a saucepan with the rest of the honey; once it thickens slightly, add the chopped walnuts.

Unmould the yoghurt flans and pour the honey and walnut caramel over them.
