Bruno's Mashed Potato

My friend Bruno is Belgian. Sometimes we think (automatically, without reflecting) that outside Spain, France and Italy people in Europe eat terribly and there's no interesting culinary tradition. Well, Bruno is a good cook: I've always eaten fantastically well at his house. He's quite daring with combinations, but skilled enough not to go wrong when mixing ingredients. And what I admire most about his cooking is that he often makes his own bread, which is truly exquisite.

The reason for this post is to give you the recipe for his mashed potato (more or less, because he didn't explain it to me in detail either). We've made it at home (by eye) ever since he told me about it, and it's delicious. You might ask: can mashed potato be delicious? The answer is yes, of course it can.

Bruno's mashed potato

Ingredients (I've made up the quantities; adapt them to your taste)

  • 500 g good-quality potatoes
  • 100 ml cream
  • 1 egg
  • 50 g butter (nobody said this was a diet purée)

Method

Wash the potatoes thoroughly and cook them in their skins in plenty of lightly salted water.

Mash them, add the other ingredients, adjust the salt and pepper to taste and enjoy an excellent mashed potato.
