Basil and Mint Sorbet: a Refreshing, Easy Dessert

Basil and mint sorbet

One of the first recipes I posted on this blog of ours, in January 2006, was basil sorbet.

It really is a marvel that can be served as an aperitif or as a refreshing dessert.

This summer, when we celebrated a friend's 40th birthday, another friend photographed the sorbet we'd made for the occasion. I love the photo, so I'm sharing it with you, along with a reminder of this easy, surprising recipe.

Ingredients

  • 1 cup of sugar
  • 1/2 cup of mint leaves
  • 1/2 cup of basil leaves
  • Lemon juice

Method

Make a sugar syrup by bringing 1 cup of water and 1 cup of sugar to the boil, then lower the heat and leave for about 5 minutes, stirring constantly. Leave to cool in the fridge.

Blend 1/2 cup of mint leaves and 1/2 cup of basil with 1 cup of water. Add another cup of water and 1 tablespoon of lemon juice, and leave to cool in the fridge. Mix the sugar syrup and the herb infusion well in an ice-cream maker.

Serve in Martini glasses and garnish with mint leaves.
