Easy Apple Cake Measured with a Glass (No Scales Needed)

Homemade apple cake

I think it's very common in couples for whoever cooks less to end up specialising in what we might call sweet cooking — especially cakes, sponges and so on.

At home, my wife has got back into the habit of baking.

She makes one with apple that, as well as being unusual, is very easy to make. She made it recently and it was a hit.

Ingredients (she uses a standard 200 ml glass to measure)

  • 1 glass of flour
  • 1 glass of milk
  • 1/2 glass of oil
  • 1 glass of sugar
  • 3 eggs
  • 1 sachet of baking powder (Royal)
  • 3 apples

Method

Line a cake tin with aluminium foil, base and sides.

Peel the apples, cut them into quarters and then into slices, and place them in the tin.

Mix all the batter ingredients — that is, the flour, milk, oil, sugar, eggs and baking powder. Pour the batter into the tin, over the apples.

Finally, bake at 180 °C for 25–30 minutes.

As you can see in the photo, there's apple not only on top but all the way through, which gives it a very interesting texture.

One day we tried it with pears instead of apples — it was the idea of my youngest son, who loves pears — but it isn't as good.
