Artichoke Pie (Savoury Artichoke Bake)
My mother makes a few savoury pies, among them the fish one, which I've already told you about, and the one I'm sharing today, artichoke.
Artichoke pie has a special vibe thanks to the flavour of the artichoke; I'd say it's very refreshing. Without further ado, the recipe:
Ingredients
- 1.5 kg artichokes
- 2 garlic cloves
- 3 slices of bread
- 100 g bacon
- 250 ml milk
- 5 eggs
- 100 ml cream
- grated cheese
- Tomato sauce
Method
Peel the artichokes, removing the tougher leaves, clean them well and cut them into 6 or 8 pieces. Boil the artichokes for 10 minutes, drain them and fry them with a little garlic and parsley, and at the last moment add the very finely chopped bacon.
Soak the bread in the milk and meanwhile beat the 5 eggs as if for an omelette. Mix all the ingredients in a bowl: the artichokes, beaten eggs, soaked bread, cream and grated cheese, and season with salt and pepper.
Grease a rectangular mould with oil; if it's metal, line it with aluminium foil (no need with a silicone one). Fill the mould with the mixture.
Bake in a bain-marie at 180 degrees for about 35 or 40 minutes.
To serve, top with fried tomato sauce; if you use my special fried tomato recipe, you'll have a 10 out of 10 dish.
